Dreamy Creamy Chicken Pasta

Ingredients
- (1 lb, sliced) Chicken Breast, Boneless
- (1 lb) Bacon ENDS
- (1 lb) Fettuccini or your favorite pasta
- (3 Tbsp) Butter
- (6) Garlic cloves, minced
- (1) Medium onion, finely chopped (white or yellow is fine)
- (2 1/4 cups) Heavy cream
- (2 1/4 cups) Pasta cooking water
- (1 cup + your personal comfort level) Parmesan, freshly grated
- Optional: 5 oz sun-dried tomato strips, chopped; bag of spinach
Directions
- Cook pasta (remembering that you are going to save pasta water!) according to package, but subtract 2 minutes because it finishes cooking in the sauce. SCOOP OUT and save pasta cooking water.
- Season chicken with your favorite seasoning mix or salt and pepper to taste. Melt bacon fat in a large pan (all ingredients finish in it) and cook chicken in bacon fat until cooked through. Do not wipe pan out if you like bacon flavored everything but if you prefer aesthetically pleasing dishes and less bacon, wipe pan out and melt butter (no butter needed if using bacon fat).
- To melted butter, add garlic and onion, cook for 3-4 min or until onion is soft. Add cream, 1/2 the pasta water and Parmesan (and optional sun-dried tomatoes). Stir and simmer for 2 minutes, until starting to reduce. Season with salt and pepper.
- Add pasta and toss in sauce for 1-2 minutes. Add more pasta water to get to your favorite sauce consistency. Toss in bacon and chicken (and spinach if using). Serve! Preferably with some white wine.
Bacon ends are recommended (a little less $/lb) but you can use any of our bacons, including our sugar-free options!
