Get-Ahead Greek Gyros

Ingredients
- (1 lb) Gyro Meat
- (For frying) Oil, lard, tallow, ghee, or bacon drippings
- Pita bread or salad greens
- (1 cup) Tzatziki sauce
- (3) tomatoes, sliced
- (1) red onion, thinly sliced
- (1/2 cup) Feta cheese crumbles
- (Optional) Lettuce
Directions
- Heat a cast iron skillet over medium high heat. Add a little oil to lightly coat the bottom of the pan. Once hot, lay the meat slices flat and cook for just 1-2 minutes on each side, until browned and crisp. (Alternately, you can lay the pieces flat on a lined baking sheet and broil for a few minutes in the oven.)
- Assemble! Serve gyro meat in a warm pita, topped with tomato, onion, lettuce, tzatziki, and feta.
To make your own Tzatziki sauce, combine:
- 1 cup Greek yogurt,
- 1 clove minced garlic,
- 1 Tbsp fresh lemon juice,
- 1 Tbsp olive oil, 1 tsp red wine vinegar,
- 1 tsp dried dill weed, salt and pepper (to taste). Refrigerate until ready to serve.
