Sausage-stuffed Mini Peppers

Ingredients
- (1 lb) Italian Sausage
- (1-1/2 lb) mini sweet peppers
- (24-oz. jar) jar of spaghetti sauce
- (8 oz.) shredded mozzarella cheese
- (optional for serving) noodles
Directions
- Cut the tops off of the peppers and remove any large ribs that would prevent stuffing.
- Stuff each pepper with sausage (it's okay if the sausage sticks out a bit).
- Place stuffed peppers in a slow cooker or 9x13 casserole dish.
- Cover stuffed peppers with spaghetti sauce.
- OVEN: Top with mozzarella cheese. Bake for 40 minutes at 350°F or until cheese is brown and sausage is cooked through.
- SLOW COOKER: Cook peppers in spaghetti sauce for 6-8 hours on Low. Top with mozzarella cheese for the last half hour.
- Serve over noodles, like spaghetti noodles or zoodles!
Steph's Secret: Stuffed peppers and spaghetti sauce can be frozen in a gallon Ziploc bag for a future meal so it would be wise to make one for now and one for later!
