When Angelica started making this kim chi back in 2004, I decided to use chipotle peppers. Their smoky heat pairs well with the robust tanginess of fermented vegetables. As a living food, our raw Chipotle Kim Chi is full of probiotics, enzymes and organic & eco-farmed produce.

My favorite uses: on our grassfed beef summer sausage, topped over fried potatoes and in mac and cheese.
