Air Fryer Lobster Tail
Lobster tails stuffed with panko crumbs that have been tossed in butter and white wine, then air-fried and sprinkled with chives, lemon zest, parsley, and sea salt. These air-fried lobster tails are sweet, tender, juicy, and delicious. And they are ready in less than 15 minutes!
Nonna’s Seafood Stew
This easy yet elegant seafood stew comes from my mother-in-law, Coral, who has been making this recipe over the past 45 years, tweaking it ever so slightly each time. She originally learned how to make it from a good girlfriend when she lived in Brazil in the mid-1970s. We love the combination of mussels, shrimp, and cod in this recipe. It’s hearty, warming, and perfect for chilly evenings. Serve with a large loaf of crusty bread.
Halibut with Roasted Tomatoes and Basil
Cherry tomatoes with garlic, olive oil, and balsamic vinegar are roasted until jammy, then served on top of simply sautéed halibut, all topped with fresh basil. This meal is perfect for late summer dinners when you have an abundance of garden tomatoes. Halibut fillets can be on the thicker side, so they will take longer to cook than a thinner white fish like cod or haddock.
Teriyaki Salmon Kebabs
No summer grill-out is complete without kebabs! These teriyaki salmon kebabs are packed with flavor, crunch, color, and nutrition—and are guaranteed to convert anyone into a salmon lover! Salmon, broccoli, and red onion marinated in a quick homemade teriyaki sauce, skewered on kebabs, and then grilled until smoky and delicious. These salmon skewers are so easy and quick to make, and they’re guaranteed to be a big hit among kids and adults alike.
