Skip the sprays

Most cooking sprays are more than “vegetable" oil. Many include propellants and additives (common ones are things like lecithin and silicone-based anti-foaming agents). Plus, vegetable oils aren't even a real thing - killing you slowly seed oils sure are though. So if you’d rather keep your cooking fats simple and recognizable, this is the easy swap.

How to use

  1. Heat your pan (although not necessary for baking sheets or muffin tins).

  2. Push up from the bottom to expose a little tallow (hard to push-up? toss it in the freezer!).

  3. Swipe directly on the surface to coat, keep swiping if you need more!

  4. Put the cap back on, smile at the ease & enjoyment of whole food cooking, and you’re done!

Storage

Tallow is shelf stable. Store in a cool, dry spot. If your kitchen runs warm, pop it in the freezer, which has the bonus of making it easy to push-up.

Bonus uses outside the kitchen

Tallow has been used for generations as a conditioner and protectant. This stick is handy to keep around for quick touch-ups.

  • Cast iron and carbon steel care: a light swipe after drying helps protect and maintain seasoning.

  • Leather conditioning: boots, belts, work gear and similar items, apply a very thin coat and buff.

  • Shop and farm tools: wipe a tiny amount on clean, dry metal to help prevent rust.

  • Squeaky hardware: a small swipe can help on hinges, latches and sliding parts.

Tip for non-cooking uses: apply lightly, you can always add more, you’re coating, not saturating. If you choose to use it on leather or tools, test a small spot first (and don't be surprised if dogs suddenly find you irresistible).
