Most cooking sprays are more than “vegetable" oil. Many include propellants and additives (common ones are things like lecithin and silicone-based anti-foaming agents). Plus, vegetable oils aren't even a real thing - killing you slowly seed oils sure are though. So if you’d rather keep your cooking fats simple and recognizable, this is the easy swap.
Heat your pan (although not necessary for baking sheets or muffin tins).
Push up from the bottom to expose a little tallow (hard to push-up? toss it in the freezer!).

Tallow is shelf stable. Store in a cool, dry spot. If your kitchen runs warm, pop it in the freezer, which has the bonus of making it easy to push-up.
