Above-Average Beer Brats

Ingredients
- (1) Medium red or yellow onion, sliced
- (3) Cloves garlic (minced)
- (optional) Sprigs of fresh rosemary
- (1+ bottles) Beer
- (optional) Orzo, brat buns
- (1-2pkgs) Pork Bratwurst
- (a few swipes) Tallow Cooking Stick
- Optional instead of tallow: butter or lard
Directions
- Before you get started, open one of the beers for yourself to make sure it is good enough to use for the brats. If it passes inspection, proceed to step 2.
- In a heavy-bottomed skillet, melt about 2 Tbsp of your preferred fat over medium-high heat. Once hot, add the brats and cook for about 3 minutes per side, or until they have a deep golden brown color. Remove the brats from the pan and set aside.
- Add about 2 more Tbsp of fat to the skillet. Add the sliced onions and cook for about 7 minutes, stirring occasionally, until softened and starting to brown.
- Add the garlic and rosemary, if using, and cook for 1-2 minutes more. Do not wander away - the garlic will burn.
- Add 1 bottle of beer to the onions, then add the brats back into the pan. Turn the heat to medium-low, cover and simmer for 5 minutes.
- Flip the brats, cover again and cook for another 2-3 minutes, or until the internal temperature reaches 160°F.
- Remove from heat and let the brats rest for 5 minutes. Remove and discard the rosemary sprigs.
- Serve the brats on buns with onions and grainy mustard or, if you love sauce, especially the beer-onion sauce you just made, try serving over orzo to soak up all that goodness.
