Bacon-wrapped Corn on the Cob

Ingredients
- (1 lb) Bacon
- (4 ears) Sweet corn
- (1 tsp) Chili powder
- (1/2 tsp) Sea salt
- (1/2 tsp) Black pepper
- (1/4 cup (or maple syrup)) Raw Honey, 12oz Kaiserson
- (2 Tbsp) Olive oil
Directions
- Preheat oven to 425°F. Mix together chili powder, sea salt and black pepper. Note: You can use any of your favorite seasonings & spices!
- Brush or spray corn with a little olive oil, season with seasoning mix.
- Wrap each corn cob with bacon* - best if bacon is pounded so it’s even and if each piece slightly overlaps, until the entire cob is covered - about 3 slices/cob.
- Season the outside of the bacon with remaining seasoning, drizzle with honey or maple syrup and use basting brush to ensure it’s evenly spread.
- Wrap each cob with foil. Place on a baking sheet and cook in the oven** for 25-30 min or until bacon is crispy and corn is cooked through, flip halfway through.
- Let rest to cool and enjoy warm!
*Seasoning variations: skip the honey/syrup & seasoning, instead wrap jalapeno slices and basil leaves between the corn and bacon and serve with a lime crema.
**Cooking variations: Grill over medium heat (do not need to wrap in foil), quarter turn every 5 mins, until bacon is crisp and corn is tender, 25-30 min total.
