BLT Pasta Salad

Ingredients
- (1 lb) Shoulder Bacon
- (1 lb) Pasta (fusilli works great)
- (1 cup) Mayonnaise
- (3/4 cup) Whole milk
- (1 oz) Nothing Hidden Ranch Seasoning, 2.7oz glass jar
- (Juice from 1 lemon) Lemon
- (1/4 cup) Parmesan cheese, grated
- (1/2 tsp) Black pepper, ground
- (1 pint (or 2 cups of any tomato will do)) Grape tomatoes
- (2-3 cups) Romain lettuce, chopped
- (1/2 cup) Red onion, chopped
- (1/4 cup) Fresh herbs (dill, parsley, etc), chopped
Directions
- Follow pasta instructions to cook until al dente and rinse with cold water. Cook bacon until crispy and cut into bite-sized pieces.
- Meanwhile, whisk together the mayonnaise, milk, ranch seasoning, lemon juice, parmesan cheese, and black pepper in a large bowl. Add the pasta, tomatoes, onion, herbs, and half of the crumbled bacon to the bowl with the dressing. Gently fold together to coat. Mix in lettuce and top with remaining bacon.** Serve.
*To save time, could sub the mayo, milk, ranch mix, lemon, Parmesan and black pepper with ready-made ranch dressing, ~ 2 cups. Could still add cheese & pepper though.
**Do not mix in lettuce or top with remaining bacon until just before serving to keep them crunchy.
