Breakfast Baaaake
Lamb, feta and eggs....a perfect way to start your day! Or really, for any time of the day! Not a lamb lover? Substitute with pork sausage or your favorite ground meat. (but then try some good lamb from a farm like ours, because it's delicious.)

Ingredients

  • (1/2 lb) Ground Lamb
  • (7) Brown Eggs, 1 doz
  • (1 tsp) Garlic powder
  • (1 tsp) Sea salt
  • (1/2 tsp) Black pepper
  • (1) Large burrito-sized flour tortilla
  • (1 cup) Bell peppers, cut-up
  • (1) Small onion, chopped
  • (2 cups) Baby spinach
  • (4 oz) Feta, crumbled

Directions

  1. Heat a pan on the stove over medium high heat, add ground lamb, season with salt, pepper and garlic powder and cook until browned, breaking into smaller pieces as it cooks. Remove lamb from the pan, reserve at least 1 tsp of fat in the pan for frying.
  2. Put the pan back on medium high heat, add the bell peppers and onion. Sauté until the veggies become tender.
  3. Prepare a round pie dish or cake pan with cooking spray or grease the pan with any extra lamb tallow from browning and line with the tortilla.
  4. Lightly beat 4 of the eggs. Add the cooked ground lamb, bell peppers, onions and spinach and stir to mix. Pour into the pan making sure the meat and veggies are evenly spread out. Crack the remaining eggs on top (no need to break the yoke or mix them in) and top with crumbled feta cheese.
  5. Bake in a 400°F preheated oven and bake for 18 minutes or until the yolk and egg whites are firm. Enjoy immensely!
