Chorizo Tacos

Ingredients
- (1 lb) Chorizo
- (12 count) Corn tortillas
- (1/4, medium) Red onion, diced (or pickled!)
- Optional toppings: cilantro, cotija cheese (or queso fresco), avocado or guacamole, radishes, salsa verde
Directions
- Make Lime Crema Sauce if you want to use it (otherwise, just use sour cream):
- Mix together in a small bowl:
- 1/2 cup sour cream, 1/2 tsp garlic powder, 1 Tbsp lime zest (1 lime), 1/4 tsp lime juice, and a pinch of salt, optional: 1/4 tsp cayenne pepper for spice.
- Mix together in a small bowl:
- Cook chorizo in a skillet over medium-high heat until cooked through and crisp. Transfer to a plate/bowl, leaving grease in skillet.
- Heat tortillas in the reserved chorizo grease over medium heat until warmed, 1-2 minutes per side.
- Stack 2 corn tortillas per taco, fill with chorizo, onion and all your favorite toppings!
