Chorizo Tacos

Ingredients

  • (1 lb) Chorizo
  • (12 count) Corn tortillas
  • (1/4, medium) Red onion, diced (or pickled!)
  • Optional toppings: cilantro, cotija cheese (or queso fresco), avocado or guacamole, radishes, salsa verde

Directions

  1. Make Lime Crema Sauce if you want to use it (otherwise, just use sour cream): 
    1. Mix together in a small bowl: 
      1. 1/2 cup sour cream, 1/2 tsp garlic powder, 1 Tbsp lime zest (1 lime), 1/4 tsp lime juice, and a pinch of salt, optional: 1/4 tsp cayenne pepper for spice.
  2. Cook chorizo in a skillet over medium-high heat until cooked through and crisp. Transfer to a plate/bowl, leaving grease in skillet.
  3. Heat tortillas in the reserved chorizo grease over medium heat until warmed, 1-2 minutes per side.
  4. Stack 2 corn tortillas per taco, fill with chorizo, onion and all your favorite toppings!

For extra fun, make scrambled eggs and enjoy some Breakfast Chorizo Tacos in the morning!
