Game Day Beef Queso

Ingredients
- (1 lb) Ground Beef, 1 lb pkgs
- (2 Tbsp) Yo Quiero Taco Blend Spice
- (16 oz (1 lb)) Sharp cheddar cheese, cubed
- (16 oz (1 lb)) Pepper jack cheese, cubed
- (4 oz) Cream cheese, cubed
- (1 cup) Rotel tomatoes with green chilies (or your favorite salsa)
- (1/2 cup) Whole milk
- (1 bag (~12 oz)) Tortilla chips
- (cilantro, avocado, tomato, sour cream, jalapenos, etc) Your favorite toppings!
Directions
- In a large skillet over medium-high heat, cook ground beef until no longer pink and season with taco seasoning.
- Drain the juice from the can of tomatoes (for a runnier queso, don’t drain).
- To the beef, over medium-low heat, add the tomatoes and cheeses (including the cream cheese) and stir frequently, until cheese begins to melt.
- Add the milk, as needed, to thin the queso to your preference.
- Garnish with additional toppings if desired like: cilantro, avocado, fresh tomatoes, sour cream, sliced jalapenos.
Note: use any cheese combination you’d prefer!
Note: do NOT use pre-shredded cheese, it will not melt nicely and will be gritty because it’s coated to prevent it from sticking together (also means your paying for anti-caking agent and not just cheese....something to think about!!). :)
Note that since this is made with real cheese it will thicken as it sits, simply stir in more milk to thin.
Note that this recipe can be enjoyed ANY day and not just on game days. :)
