Grilled Chicken Legs

Ingredients
- (2 lbs) Chicken Legs/Drumsticks
- (2 Tbsp) Olive or avocado oil
- (1 tsp or to taste) Garlic powder*
- (1/2 tsp) Onion powder
- (3/4 tsp) Smoked paprika
- (1/2 tsp) Ground mustard
- (1/4 tsp or to taste) Cayenne
- (1 tsp) Sea salt*
- (1/2 tsp) Black pepper*
Directions
- Clean & season the grates of your grill with oil, preheat the grill to 350°F for at least 5 minutes.
- In a small bowl, mix all the dry ingredients. Pat legs dry with paper towel, coat with oil and rub seasoning mixture all over chicken legs (do with a basting brush and hands or put into a ziploc bag and shake!).
- When grill is hot, add the chicken legs over indirect heat, close the lid and cook for about 40 minutes total, flipping every 10ish minutes and keeping the lid closed as much as possible, until the internal temp is at least 165°F (dark meat tastes best if it reaches 175-185°F, being sure to take into account the +5°F increase during resting). During the last 5 minutes put the legs over direct heat/coals to crisp up the skin. Remove the legs and let rest, uncovered, for 5-10 minutes before serving.
- Serve with a garden salad and roasted veggies or the classic creamy coleslaw, corn on the cob and potato salad.
