Killer Carnitas Freezer Meal
Make one for now to cook today and make a second one to freezer for the next time you're stressed out and don't want to think about cooking!

Ingredients

  • (3-5 lbs) Picnic Roast
  • (1 medium) Onion, diced
  • (5 cloves) Garlic, chopped
  • (1 Tbsp) Hot sauce
  • (1 Tbsp) Hot sauce
  • (1/2 cup) Orange juice
  • (1/4 cup) Lime juice
  • (1 tsp) Oregano
  • (2 tsp) Cumin
  • (1 tsp) Chili powder
  • (2 tsp) Sea salt
  • (1 tsp) Black pepper

Directions

To freeze for later: Place all ingredients in a gallon sized bag, double bag and freeze.


To cook:

  1. Empty thawed contents (or fresh) into slow cooker, cook on Low for 6-8 hours or High for 4-5 hours or until tender and easily pulls apart.
  2. Tip: if pork or beef roasts seem cooked but are tough they need more time cooking.
  3. Preheat broiler. Line baking sheet with foil. Pull roast apart and spread on foil. Broil meat for 3 minutes. Using tongs, turn meat over and spoon ¼ cup of juices from slow cooker over the meat. Broil another 3-4 minutes or until edges of meat start to crisp up and turn brown. Remove and spoon another ¼ cup of juices over pork.
  4. Serve in tacos, burritos, salads or enjoy plain!
