Pork Fajitas with a Pear Twist

When's the last time you had PORK fajitas? If “never” is your answer, you might be missing out because there are some people who will say the pork version is better than the beef version! Which one are you??
I guess there's only one way to find out and no, it's not thumb wrestling… Even better, you gotta make these Pork Fajitas with a Pear Twist and find out for yourself!
Ingredients
- (1-2 lbs) Pork Fajita or Stir Fry Strips
- (2) bell peppers, sliced
- (2) jalapeno peppers, sliced
- (1) large sweet onion, sliced
- (4-5) cloves of garlic, roughly chopped
- (bundle) fresh basil leaves, chopped
- (bundle) fresh oregano leaves, chopped
- (2 Tbsp) olive oil
- (1 tsp) Jacobsen Pure Flake Sea Salt - 4 oz Bag
- (1/2 tsp) red pepper flakes
- (1 tsp) sugar
- MARINADE
- (2 tsp) oregano
- (1 tsp) black pepper
- (1/2 tsp) cayenne pepper
- (1 tsp) sea salt
- (1 tsp) ground cumin
- (1/4 cup) Italian parsley, chopped
- (1/4 cup) fresh cilantro, chopped
- (2 Tbsp) lemon or lime juice
- (2 Tbsp) olive oil
Directions
- Marinade the pork for at least one hour or overnight.
- Heat 1-2 Tbsp of oil in a cast iron pan over medium heat, add the peppers, onion and garlic and cook until softened and edges start to color. Add the salt, red pepper flakes, sugar and herbs and toss. Remove from pan and place pan back on heat.
- Add the marinated pork to the pan and cook until the thickest piece is cooked through or to your desired level of doneness (overcooking will cause strips to toughen up).
- Assemble the pork and peppers however you prefer but we highly recommend trying this: flatbread wrap + pork & peppers + sliced avocado + feta cheese + honey drizzle. Move over steak fajitas there’s a new kid on the block (shoutout to the 90s kids!)
GARNISH IDEAS: avocado, honey, feta, and an under-ripe pear sliced thin, or go traditional!
