Potatoes au Gratin with Ham & Eggs

Use up leftover ham in this delicious and simple dish! It's a great side dish or breakfast.

Ingredients
- (4) large potatoes, preferably Yukon Gold but any will do
- (6) hard boiled eggs, peeled and sliced
- (2) raw eggs
- (1/3 cup) sour cream or mix of sour cream & heavy cream/half-and-half
- (2-3 Tbsp) milk
- (To taste) Salt & pepper
- (1 pound, chopped) Whole Ham (naturally smoked and cured)
- (1-1/2 cup) shredded cheddar cheese or other cheese that melts well
- (1-2 Tbsp) butter for buttering the dish
- (1 Tbsp) bread crumbs
Directions
- Preheat the oven to 350°. Boil the potatoes with the skin on. When cooked, peel the potatoes and slice into medium-thin slices.
- Butter the inside of a 9x9 inch baking dish and sprinkle bread crumbs on the bottom and sides.
- Place a layer of potato slices on the bottom of the dish. On the potatoes, layer sliced hard-boiled eggs. Add a layer of chopped ham over the eggs.
- In a separate bowl, beat the 2 raw eggs together, add the sour cream, milk, salt & pepper to taste. Pour a few tablespoons of this mixture over the ham, eggs, and potatoes. Sprinkle shredded cheese over.
- Continue layering the same way, potatoes, eggs, ham, sour cream mixture, and cheese until you finish with all the ingredients.
- The last layer should be potatoes covered with the last amount of sour cream mixture and more cheese.
- Bake at 350F until golden brown, about 30-40 minutes. Serve warm!
Optional: add chopped bacon!
