Sausage & Kale Soup

Ingredients
- (2 lbs) Italian Sausage
- (2) potatoes, cubed (and peeled if not organic)
- (4 cups) kale, chopped
- (10) garlic cloves, minced
- (1 cup) onion, chopped
- (2 tsp) basil
- (2 tsp) marjoram
- (2 tsp) oregano
- (2 tsp) rosemary
- (2 tsp) thyme
- (2 tsp) parsley
- (1 tsp) sea salt
- (1 tsp) black pepper
- (1 tsp) red pepper flakes (optional)
- (2-4 cups) Simple Pork Bone Broth, 32 oz (sugar-free)
- water
- (optional for serving) Parmesan cheese, crusty bread
Directions
- Fry the sausage just enough to break it into small pieces, unnecessary to cook thoroughly.
- Add the broken-apart sausage and all the remaining ingredients to a slow cooker.
- Optimal if slow cooker is 1/2 to 3/4 full. Add up to 6 cups of water to fill crock or reach your preferred thickness.
- Cook on low for 6-8 hours or High for 3-4 hours.
- Top with Parmesan cheese and crusty bread slathered with butter.
Steph's Secret: Make one for now & freeze one for later! All ingredients can go into a gallon Ziploc bag for a dump-it-and-forget-it easy meal. Broth can be left out if freezer space is at a premium.
