Sausage & Kale Soup
This Sausage and Kale Soup recipe combines sausage, kale, potatoes and lots of herbs and spices in a warm, cozy broth. Each spoonful will make you smile and feel warm inside. Ready to give it a try?

Ingredients

  • (2 lbs) Italian Sausage
  • (2) potatoes, cubed (and peeled if not organic)
  • (4 cups) kale, chopped
  • (10) garlic cloves, minced
  • (1 cup) onion, chopped
  • (2 tsp) basil
  • (2 tsp) marjoram
  • (2 tsp) oregano
  • (2 tsp) rosemary
  • (2 tsp) thyme
  • (2 tsp) parsley
  • (1 tsp) sea salt
  • (1 tsp) black pepper
  • (1 tsp) red pepper flakes (optional)
  • (2-4 cups) Simple Pork Bone Broth, 32 oz (sugar-free)
  • water
  • (optional for serving) Parmesan cheese, crusty bread

Directions

  1. Fry the sausage just enough to break it into small pieces, unnecessary to cook thoroughly.
  2. Add the broken-apart sausage and all the remaining ingredients to a slow cooker.
  3. Optimal if slow cooker is 1/2 to 3/4 full. Add up to 6 cups of water to fill crock or reach your preferred thickness.
  4. Cook on low for 6-8 hours or High for 3-4 hours.
  5. Top with Parmesan cheese and crusty bread slathered with butter.

Steph's Secret: Make one for now & freeze one for later! All ingredients can go into a gallon Ziploc bag for a dump-it-and-forget-it easy meal. Broth can be left out if freezer space is at a premium.
