Versatile Skirt Steak

Ingredients
- (1-2 lbs) Skirt Steak
- (5) Garlic cloves, smashed
- (3-4 (dry = 1 1/2-2 tsp)) Thyme sprigs, fresh
- (3-4 (dry = 3-4 tsp)) Rosemary sprigs, fresh
- (1/4 cup) Vinegar: sherry or any higher-quality vinegar you have on hand
- (1/2 cup) Extra Virgin Olive Oil: can be infused with garlic, herbs or anything with a similar taste profile
- (1/4 cup) Soy sauce
- (to taste) Sea salt & black pepper
Directions
For the marinade:
- In a shallow pan or ziplock bag mix together all the marinade ingredients (if using fresh herbs tear or crush the leaves) and add steak.
- Marinate a minimum of 1 hour and max of 3 (the vinegar will keep breaking down the meat and eventually make it mushy).
Cook & Enjoy
- Cook any way you prefer! Broil, grill, cook in a grill pan or slice (against the grain!) and pan fry the strips. Best to cook fast, over high heat, with a 5 min rest. Use a meat thermometer but rule of thumb is 3-4 minutes per side for medium rare (internal temp 130°F).
- Enjoy in your favorite way! Serve with chimichurri sauce, in a steak burrito, as a steak with potatoes and veggies, on a steak salad, fajitas, taco bowl, carne asada or simply as easy peesy steak bites!
