Thinly sliced means it cooks fast and packed with flavor means it will taste great! We do recommend marinating and tenderizing to highlight the flavor and, as with hanger steaks, be sure to cut against the muscle grain - which runs at a 45 degree angle, rather than the end-to-end like usual, so take care when slicing!
