About our Family & Farm

MEET AMANDA

The woman behind Amanda’s Eggs! She’s had chickens since she was a little girl. It was in 2009 when she decided to take her knowledge and passion for birds full-time, starting her farm with just 36 hens, selling mostly to neighbors and locals. In the year that followed, Amanda added 300 additional chickens and started to expand her operation to wholesale, marketing to meat markets, local food coops, grocers, restaurants, cafes, and kitchens.

The business steadily grew to a flock of 2000 layers. She also welcomed 500-1500 Broiler chickens last spring and recently acquired Special Blacks that she markets directly to those who prefer fresh poultry that they can prepare themselves.

GROWING FARM & FAMILY

During the time that the farm was growing, Amanda and Nick’s family was too. Her daughter Clare Frances was just two, her daughter Margaret Catherine was born in 2009, followed by Emery Nicholas in 2011, and, last but not least, Anna Rose in 2014. The children have always been an essential part of the operation, collecting, washing, packing, and of course cleaning pens. Their favorite part is when the new chicks arrive.

Amanda feels blessed to be able to model good work ethic, perseverance, entrepreneurship, good customer service, good ethics and honesty, respectful animal husbandry/welfare, and respectful stewardship for the animals and land for her family and friends.

While working at General Billy Mitchell Air Reserve Station, the base was ordered to close under Base Realignment And Closer (BRAC) act. The decision was made that Ron would retire and the family would return to their hometown in Eau Claire, WI. Shelly planned on finding a job doing assisted living while Ron planned on crafting flag cases. During a visit to Eau Claire, Shelly and Misty joined other family members to go to some thrift sales. Their route took them past a bed and breakfast with a small apple orchard and a wood working shop on 10 acres of land. This gem became their new home and Apple Valley Enterprises, LLC was born.

A mother of two, she decided it was time to utilize the paradise of ingredients in Portland, Oregon to create something truly special. Faith set out to reconstruct the classic candy bar replacing candy coating with domestic dark chocolate, local honey eliminated the need for corn syrup and only the finest regional nuts, butter and sea salts. Faith shared her love of quality local ingredients with her first creation the Honey Bar, which then became the Honey Bar Jr. and Honey Bar Reserve. She developed numerous amazing recipes for delectable candy bars that elevate candy from years past. After doing production for almost a year, Andrea Marks took over in late 2016 and is now the Queen Bee running every aspect of the company.

It was back in the summer of '93 when I was first enlightened with the idea of making candles. My good buddy Hefe and I were hiking along the rugged shoreline of the Olympic Peninsula. On our first evening, as the final rays of sunshine dipped below the horizon, we breathed deep of the fresh ocean air and fixed our gazes upon the emerging stars. After several hours of philosophical banter on the meaning of life, my eyes settled on the most recognizable beacon in the northern sky, "The Big Dipper". Suddenly my future flashed before my eyes. I would use elements of nature, which I so respect, to create a natural source of light. Hand "dipped" beeswax candles. And so "Big Dipper" Wax Works was born. Like drones to their queen, we have served and remain dedicated to our values, and proudly continue to make the best all natural candles available.

REDEFINING SUSTAINABILITY
Mainstream conversations around food sustainability rarely consider the people involved in growing, harvesting, transporting, processing and cooking food. Sustainability is discussed in terms of environmental impact, or the comfort of livestock providing meat, dairy or eggs.

We believe that the standard measures of sustainability must evolve to consider the conditions in which the farmers who drive global food supply chains earn their livelihoods. Single origin ingredients draw attention to the unique environments in which incredible ingredients grow and to the farmers with the expertise and commitment to grow them well.

THE CHALLENGE IN OUR PATH
Our task is not a straightforward or easy one, but worthwhile things never are. There are several significant challenges to our direct sourcing model:

  • Established industrial food supply chains are slow, opaque and outdated, spanning enormous geographic, cultural and economic distances.
  • Economies of scale value quantity over quality, consolidating products grown by individual producers from different countries and making it impossible to trace foods back to their origin. The lack of traceability increases the risk of contamination and adulteration and reduces special products to bland mediocrity.
  • Consumers in the United States don’t effectively utilize their buying power to fight against abuse of workers and demand equitable food sourcing practices and full traceability.

BUILDING A NEW GLOBAL SUPPLY CHAIN
Burlap & Barrel sources our spices directly from farmer cooperatives and small farms, bypassing brokers and middlemen who drive prices up and quality down.

We visit farms and spend time with farmers, learning firsthand about the economic, social and cultural factors behind their farming methods, and we support them to improve the quality, quantity, and value of their products.

The farmers that work with Burlap & Barrel benefit from:

  • Purchase commitments to give farmers greater financial security
  • Shared knowledge from across our global farmer network
  • Support in expanding on-site value-added activities such as sorting, grinding, and packaging to increase farmer revenue
  • The commodity spice industry focuses on a limited set of spices, and grades those spices using outdated measurements largely unrelated to flavor and quality. We work with our partner farmers to identify unique varietals that are often overlooked by the industry – as well as valuable byproducts – to maximize their earnings.

Then we send trucks to the farms to create the shortest supply chain possible.

The small southern town of Ailey, Georgia is now home to Dr. Pete's Foods. We are known for our delicious marinades, sauces, dressings, baking mixes, and the famous Praline Mustard Glaze. Dr. T. A. Peterson, known as Dr. Pete to his patients, was reared in this sleepy south Georgia town. It was here that he enjoyed many meals with family and friends and learned to love entertaining with great food. After becoming a doctor, he was often seen with his worn, black leather doctor's bag in hand entering homes around Savannah, Georgia, to check on a broken bone, to give a shot, or administer a friendly dose of good conversation. As much as Dr. Pete loved his practice of medicine, he equally loved the art of cooking, and he spent many joyous hours creating and preparing wonderful dishes and sauces for his family and friends. In 1985, his daughter and son-in-law, Jan and Joel Coffee, began bottling some of his recipes, and selling them to the public under the "Dr. Pete's" label. Farmers Candle Co

We moved to Virginia in 2015 with dreams of owning our own livestock and raising our son in a place with plenty of room to run. After working with our cousins who raised incredible grass-fed and finished beef and lamb as well as pasture-raised pork I realized how quickly the prime cuts of meat sold and how the tallow and lard often still filled the freezer. I was determined to find a use for the fat, after all that animal took two years to harvest and had an immense amount of love and care go into raising it.

​After attempting soap making- and failing miserably- I went back to the drawing board and after much research I learned that the first candles were made using animal fats and byproducts. I was frustrated and determined...I set out to create a candle that burned just as clean as soy and palm but didn't use any glyphosate soaked soy or unregulated palm wax, burned with a hemp wick instead of cotton because it is more sustainable to grow, burned clean and evenly, and smelled amazing using nothing but essential oils and premium grade phthalate-free fragrance oils.

People have been burning lard and tallow candles for thousands of years. When you purchase and burn an animal-fat based candle you are supporting the nose to tail movement; ensuring that all parts of the pig or cow are used, not just the filets and bacon, which are literally mouth watering, but the fat is just as important! I am passionate about supporting family farms that believe in sustainable farming and raising their animals out on pastures eating grass-the way nature intended.

I have since moved back to Wisconsin, welcomed two more babies into our family, and completely rebranded our business as well as networked with farmers to ensure I am still using sustainable grass-fed animal fat. Fed Up Foods is a woman-owned artisanal canned food business located in Stevens Point, WI. We create clean, delicious, whole food products with unique flavor combinations. Fed Up Foods creates community development through collaboration and educates people on the movement toward a nutritious and resilient food system. We work with local and regional farms, employees, vendors, and customers. 

Creation Story

Fed Up Foods was founded in December of 2019 by current owner, Melissa Haack and close friend, Miranda, who left the business early on to pursue other dreams. The two of us worked together to get Fed Up Foods off the ground and I am so grateful for Miranda's initial involvement. It seems like once you start a small business, you just figure out how to keep going, but you have to start first, and I am so glad that we started it together. 

Fed Up Foods is a beautiful illustration of what I know and continue to learn. It started with my bachelor's degree from UW-Stevens Point, a focus on natural resource policy, philosophy, & political science. Using that base of knowledge and a long bike ride around the US and parts of Canada, I thought long and hard about how to fit the pieces of what I loved together to create meaningful change. I eventually found myself working at the Stevens Point Area Food Cooperative, getting to dive deep into the local food movement in central Wisconsin through buying and managing the produce department. I gained so much knowledge on retail grocery and what it means to have wholesale relationships.

In my free time during those years, I work-traded on farms in the summer. At the farms I saw less than perfect produce getting composted and 'graded out.' I wanted to find a place for all of the miscreant produce that I was surrounded by whether it was at farms, in the produce department at the co-op, or in my garden.  I wanted to create shelf stable products with any produce I could get my hands on. I knew how to can from seeing my mother do it as a child, and with her only a phone call away, I refined my food preservation skills.

When I finished a canning day and looked over at a table of hot jars, listening to them 'pop' and seal, I noticed that I felt a deep sense of resilience, joy, and meaning. So, on track with everything else I tend to do, I magnified it. I started to write down recipes. I got excited about new flavor combinations based on what was in season, I turned the classics on their head, I reframed classic to include as many local ingredients as possible. What started as a small kitchen with a big idea transformed into what we know as Fed Up Foods. We continue to learn and thrive in Stevens Point, WI. Thanks for joining me on this journey!

 Why Fed Up?

People wonder...why Fed Up Foods? I think for a lot of us, the answer goes without saying but I explain more specifically below...

1. Fed Up about the food system, I'm angry.  There aren't a lot of options as a grocery buyer for organic and truly local products, which means there aren't many options for consumers either. Food gets wasted all throughout the supply chain, and people are going hungry all over! I plan to figure out how Fed Up Foods can be part of a solution to this problem beyond making artisanal canned goods. I know that one can't move a mountain overnight, but in my mind every jar is one step closer to a solution.

2. Fed Up like getting fed upwards and being full. There are so many foods that claim to be the answer to your problems but are full of weird additives and ingredients that I can't pronounce or understand. I like the idea of being fed upwards as a way to feel really good about what you're eating and knowing the origin story of each ingredient. I plan to find ways for Fed Up Foods to help hungry people near and far.

Fun Guy Farm is a family operated farm located in Eau Claire, Wisconsin.  What started as an experiment, has now evolved into a business.

OUR HISTORY

Fun Guy Farm origin started with a quip.  As Steve Scholtz, the original Fun Guy, selected a movie that they had already seen, Tracy Scholtz (spouse) gave him grief about his memory fading.  Steve looked into different ways to improve memory – and found that Lions Mane was often used to improve memory.

Growing Lions Mane traditionally on logs can take over a year.  Wondering if there was a quicker way, he went down the YouTube rabbit hole.  It wasn’t long before the first set up – which consisted of a concrete mixer & an ice fishing shack – was constructed.  Fast forward another month, and the first flush of mushrooms was being harvested.

Steve happened to know a market manager by the name of Deidra.  He asked if he could bring some mushrooms to the market, and she accepted him in.  The Eau Claire Downtown Farmers Market was a big hit, and from there the growth has continued into what Fun Guy Farm is today.

Our requirements were pretty simple:

  • The corn had to be naturally grown and the tortillas traditionally prepared.

We make products with the beeswax like lip balm, beard oil, candles and solid perfume. We also sell yummy raw honey! Erik is the head beekeeper, and Rachael sets her whimsy-filled ideas to motion!

The whole process of the wax from start to finish is amazing. First we watch our bees build their comb, then we collect it, melt it, filter it, melt it again, blend with oils, pour into our containers, label it and then see the product get sold to our customers (and use it ourselves!). It's so rare to see an ingredient all the way from conception to a finished product and we feel privileged to be a part of it.

Beekeeping is a blast, lovely, hot, scary, a blessing and addicting. How did we get into all of this? It's two-part. Erik has terrible allergies and wanted to get local honey as a treatment. Rachael read a book about homesteading on their honeymoon that inspired her to keep bees. We asked for a hive for Christmas in 2012 and got one from Erik's grandparents. Best Christmas gift EVER! Thanks Grandma Mary and Grandpa Jerry! We have been in love with bees ever since.

What makes our mixes different?

Most people’s reaction to pickling is that it looks way too hard, too time consuming, too confusing, and requires a bunch of equipment. Plus it seems like all of the recipes and products out there make huge batches! For us, the most shocking discovery we made in our journey to finding the perfect pickle was that none of the “dill” pickles at the store actually had dill in their ingredients. 

We were determined to figure out how we could make pickles in minutes, just a jar or two at a time, with real honest ingredients. Organic, non-GMO ingredients only. If the label says dill, the pickle mix has actual dill in it.  If the label says jalapeno, you better believe there’s going to be a kick from some real jalapeno. And no sneaking in things you wouldn’t want or expect in your pickles either.  Yellow #5 or polysorbate 80 anyone? No thank you! We realized we had to make pickle kits, because we can’t go back. Seriously. Tried it. Can’t do it.

We've been designing, creating and selling handcrafted pottery of timeless design and uncompromising quality in Cambridge, Wisconsin since 1975. What began as a small scale pottery store has evolved into a pure artisan studio and manufacturing facility handcrafting functional pottery for the home.

At Rowe Pottery we celebrate the handmade process, the materials we use and the artisans behind the products we create. Each piece of pottery begins as a raw lump of clay that is transformed into a mug, platter, dinner plate or lamp by an artisan. Each piece of greenware is ready for firing after it has dried, been glazed or hand decorated.

In the back room of the Rowe Pottery Studios stands a kiln the size of a small garage. Carts known as cars are stacked high with the greenware and are ready for the final 12-hour firing. A fully loaded car is pulled into the kiln where the temperature is slowly raised to drive out water and burn impurities from the clay. The kiln is then elevated to over 2000 degrees and gently moved into reduction. After cooling, the kiln doors are opened. There is always an element of surprise as each piece is taken out of the kiln. The firing process reveals the glaze artistry and the decorator's brush strokes as well as the touch of the potter's hands.

Owner, Bev Semmann, loves being a part of creating things that are of value to Rowe's customers and that they use in their everyday lives. "As a collector of Rowe Pottery from a young age, I always am looking for the next great piece to keep things fresh and modern, while respecting tradition," she says. Hello, I’m Tony D. I started Sacred Blossom to farm for health. My Health, Your Health and the Health of the Planet. In spring 2022 I hired my first full time help, Joe and I also get help from a wonderful world of mentors and neighbors, sporadic volunteers, my landlords and friends. My favorite role is growing the herbs that go into Sacred Blossom teas but you’ll find me doing everything from package design to packaging teas. Sending emails to sorting seeds.

Born in California, I went to highschool in Costa Rica then business school in Argentina. I dropped out to start a horse tour company and run a beachfront restaurant in Uruguay. Then I became a barefooted global nomad, of course.

At 22 I met Farmer Paul, a then 70 year old, life long student of health; soil, plant, animal and spiritual. He taught me so much and had a tremendous impact on my path. I learned under Paul for six growing seasons (nomading during Minnesota’s long winters) then went on a two year long farm tour, culminating in working on an industrial-scale herb farm.

I started Sacred Blossom in spring 2016 on rented land at Crazy Rooster Farm. I was blessed to find this beautiful farm in a community with many small-scale organic farms.

We are growing herbs on about 20 acres and our herbal teas can be found and most every grocery coop and WholeFoods location in Wisconsin and Minnesota.

Sacred Blossom Farm / Crazy Rooster Farm and Amish Telephone Booth is located in the beautiful driftless region of western Wisconsin near the town of Gilmanton. Due to chronic understaffing, we are only open to the public during our annual open house. Sign up for our mailing list to find out when.

Cutting The Best

Small, local farm production allows us to harvest herbs by hand and at the perfect time. Efficiently but with respect for the plants and their end use as the best herbal tea. Imperfect herbs and stems go to the compost pile. We reject herbs other farms would grind and put in your tea bag.

Drying and De-stemming with Care

We learned a lot from looking at herb farms around the world. Including how not to handle herbs. We have seen them dried in the sun, like hay. Or blasted with hot air. Then run through huge machines which grind and pulverize the plants.

We chose instead to follow a more sacred process. We dry each variety slowly, at just the right temperature, to dry-in freshness and potency. We have custom built, human-scale machines which allow us to de-stem and cut herbs with the highest level of artisan quality.

Low-input, Sustainable, Innovative Farming

I didn’t start farming to get rich but to follow a dream of living and working in harmony with nature. Sustainable is so difficult in the modern age with easy access to tractor power and soil consultants recommending adding tons of amendments to the acre. We try to minimize inputs, tractor usage and packaging.

In the fields we are developing innovative polyculture systems, inter-seeding strategies, small scale weeding tools, using minimum tillage, intensive cover cropping maintained by animals, long term sequential no-till plantings, pig tillage, soil health and fertility strategies a-la Dr. Elaine Ingham and Gabe Brown, and so much more. What can we say… its our passion. And our herbs are dried largely with solar power too.

Why Coffee Roasting: Stephanie is the manager and co owner at the Scatterbrain Cafe in Downsville. A small family owned cafe. Their long time coffee roaster and friend John Eager from Highland Hollow Coffee & Tea Co had decided to retire and sell his coffee roasting business. Though they were sad at the thought of no longer seeing John every Thursday morning with fresh roasted coffee in hand, they were excited at the thought of roasting their own coffee. So Stephanie approached Christian about the idea of buying John's business and the deal was made shortly after.  

​What will change: The only thing that will change is the name/branding and location. John has built a great following and premium & consistent coffee with many years of experience behind him. He has agreed to train Christian how to do the same and operate their 100 year old Cast Iron Royal # 5 Coffee Roaster. This roaster provides an unmatchable flavor. That along with John's experience we know we will be able to provide our customers with the best possible coffee.

​Why the name change: This is our first business and we are excited to make it our own!  Christian is a self proclaimed SCATTERBRAIN. With his many roles as husband, dad, son, brewer, homeowner, dog owner etc it is hard to have a consistent train of thought. But what Christian lacks in focus he makes up with in smarts, creativity, and humor. You will get to see this first hand in our branding. Christian is also a technician and has spent the last 8 years refining his craft as a brewer and is currently the head brewer at Lucette Brewing Company in Menomonie WI.

Sweet Timber Maple Co.

We are Ryan & Becky Hauser, owners of Sweet Timber Maple Co. located in Tigerton, WI. We started our family maple farm in 2014. We have around 10,000 taps of our own and purchase additional sap from local farms in the area. We create our maple syrup using a steam powered evaporator instead of a conventional evaporator. Conventional evaporators use direct heat to make maple syrup. Instead we use steam to create our maple syrup that has a beautiful light color, and sweet, unique maple flavor unlike any other. We love creating different infused flavors of maple syrup and coming up with unique maple products for you to enjoy. The Solin family settled their farm in the summer of 1917. Jeremy grew up there, and still considers the land "home." Making maple syrup is a spring ritual that keeps them connected to the land and their family. Maple syrup making is a family and community process. On any day, you can find 3 generations of Solins in the woods and in the sugarshack. 

Jeremy & Abi Solin's children are the 5th generation on the land, and they hope to be able to care for it for generations to come. They are stewards of the forest, and the health and well-being of the ecosystem is foremost in the decisions they make. Through purchasing Tapped Maple Syrup, you become part of their forests as well, helping to sustain them and the maple sap they share with us.

Together Farms produces: 100% grassfed Beef and Lamb; wild-foraging non-GMO pastured Pork; Soaps, Salves and Lip Balms from the fats produced by the animals (Good Fat Skincare); and we host Freezer-to-Slow Cooker workshops. All our meat is processed without weird stuff (no MSG, nitrates/ites, etc). We never use hormones, antibiotics, pesticides or herbicides. We DO use essential oils, clays, apple cider vinegar, and high quality sea salts and minerals to produce nutrient-dense meats. We also never confine our animals and raise them on the soil and in the sun – this cures 99% of what ailes their confined cousins. We raise heritage breeds that do well in the conditions we provide with the added benefit of tasting much better! Not only is our meat more pleasing to the palate, but it is also more pleasing to your body – pigs that are outside will naturally contain vitamin D – so you can slow down on the supplements. Beef and lamb raised on grass alone, as they were designed to do, have the correct ratio of omega 3’s to 6’s so problems rooted in excess “heat” like arthritis will subside. Truly they are good for you, the land and the local economy (triple bottom line, what the 3 leaf clover in our logo is pointing to). Our meat is sold by the cut, in bundles (like the ones that go with this eCookbook) and in bulk (wholes, halves and quarters). We sell to stores and restaurants in the WI and MN areas, through the on-farm store, at farmer’s markets and we ship throughout the US.


In addition to the things we raise we also sell organic chicken from a MN farm (actively looking for an intern so we can raise our own poultry again), high-quality ferments, like sauerkraut, from another farmer friend and non-GMO, high-quality salsas from a local producer.


There are videos on our website of both Andy and myself talking about the farm and all we’ve gone through (see here: www.TogehterFarms.com/the-farmers. But, here it is in a nutshell: Through a stroke of Providence we moved to the farm at the end of 2009 and immediately began transitioning it from a state of neglect and chemicals to one of love and health. It didn’t take long for the land and the animals to respond to the care and attention they were receiving (thankfully our bodies act the same way!). Even through the myriad of weather problems that relentlessly pounded us we continued to grow. Other farms shut their doors but we continued investing and building resiliency. Now that the weather is mostly cooperating and we’ve gotten our legs under us, we are beginning to see a return on our investment through happy animals, resilient land and healthy customers.

Our ultimate goal is to be a self-sufficient permaculture based farm but trees take a long time to grow. So in the meantime we are buying in non-GMO feeds for the pigs and intensively grazing our outstanding grass and legume pastures with the beef and sheep.

After developing our wood business in Maryland over the next several years, we started doing some sustainable forestry consulting projects in Indonesia. We had an opportunity to expand by opening our own furniture shop in Central Java, where we received our “Indonesia Green Wood” Certification, and we use only sustainably sourced woods for all of our products. We have always focused on attention to detail and establishing long-lasting relationships with an added emphasis on complete customer satisfaction. Our operation is completely family owned and operated and we will continue to provide the highest quality wood products available to the industries we serve.
