Creamy Parmesan & Garlic Boneless Chops

You are going to love this so much that you won't even notice it's gluten-free! Doing keto? This meal will make you wonder why everyone isn't doing it and you'll forget there are even any other options!
Ingredients
- (4 chops (can use bone-in chops or pork steak too)) Boneless Pork Chops
- (1/2) Onion, medium, sliced
- (4+) Garlic cloves, minced
- (2 Tbsp your favorite high-temp oil (lard, coconut, tallow, olive)) Rendered Lard, 8 oz
- (1 1/2 cups) Heavy whipping cream
- (1 oz) Cream cheese
- (3/4 cup) Chicken broth
- (1/2 cup) Parmesan cheese
- (1/2 cup) Cheddar cheese
- (1 Tbsp) Italian seasoning
- (1/2 tsp) Black pepper
- Optional: sliced mushrooms, 4 oz bleu cheese (add to sauce), bacon bits to garnish
Directions
- Heat 2 tablespoons oil in a large skillet on medium-high, brown pork chops, onion, and garlic cloves (approx 3-5 minutes each side, if the chops don't release from skillet, they aren't ready to flip.)
- Remove pork chops from skillet and cover with foil.
- Add the rest of the ingredients to the pan and cook on medium until sauce thickens. Stir continuously.
- Add pork chops back to sauce mixture and simmer on low for 3-5 minutes or until done (use a meat thermometer, pink in chops is okay!). Taste sauce and salt to taste.
- Serve with asparagus or Brussel sprouts, mashed potatoes or riced cauliflower - you'll want to use every drop of the sauce! In fact, if you love sauce - double the sauce ingredients.
