Ingredients
- (1) TF pastured pork roast
- (1) Large onion, sliced
- (3 Tbsp) Chili Powder
- (1 tsp) Coriander
- (2 tsp) Cumin
- (2 tsp) Onion powder
- (1 Tbsp) Oregano
- (1/2 tsp) Chipotle powder
- (2 tsp) Sea salt
Directions
Use whatever size pork roast you want! You can find all our pork roast options here.
Save a little time and use your favorite dry rub or pre-mixed seasoning blend, see some options here.
- Slice onions and layer on the bottom of your slow cooker.
- Mix ingredients for dry rub, then rub onto roast.
- Place roast into slow cooker onto onion bed. Cook on high 6-8 hours or until roast falls apart when touched.
- Shred and serve however you desire: straight and as-is with coleslaw and some mashed potatoes, as a sandwich on buns with sauce, in a taco, bake with cheese on top of tortilla chips as BBQ nachos.
Ideas for leftovers: pizza, quesadillas, BBQ sliders (on Hawaiian rolls with a ring of pineapple on top), Cuban sandwiches, shredded pork mac & cheese, chili, BBQ'd and stuffed inside a baked potato with all the usual loaded baked potato toppings, simply fried until crispy with some eggs for breakfast, in scalloped potatoes, in a curry, split pea soup, bahn mi, ramen....
