Easy Shepherd’s Pie

Ingredients
- (1 lb OR Ground Lamb) Ground Beef
- (5) Potatoes, peeled (if not organic) and cubed
- (4 Tbsp) Butter
- (1/2 cup) Milk
- (1 cup) Simple Beef Bone Broth, 32 oz (sugar-free, unsalted)
- (1/2 tsp) Rosemary, dried
- (1 tsp) Garlic powder
- (1 tsp) Sea salt
- (1 tsp) Black pepper, ground
- (1 tsp) Steak seasoning
- (1 Tbsp) Minced onion flakes, dried OR 1 small fresh onion, diced
- (1 Tbsp) Worcestershire sauce
- (1 1/2 cups) Frozen mixed vegetables
- (1 cup) Shredded cheddar cheese (preferably not pre-shredded)
Directions
- Preheat oven to 350℉. Lightly grease a 2 quart casserole dish.
- Make the potatoes. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain, slightly cool, add 4 Tbsp butter & 1/2 cup milk, mash. Season to taste with a little garlic, salt & pepper, maybe chives (not listed in ingredients above).
- Make the filling. In a large heavy skillet, sauté meat until browned on all sides, stirring occasionally. Drain any excess fat (save for future frying) and return meat to pan over medium heat. Add broth, Worcestershire and seasonings: rosemary, salt, pepper, garlic, steak seasoning and onion flakes. Stir in frozen vegetables. Cook, stirring occasionally, until most of the liquid has evaporated.
- Assemble & bake. Add the meat mixture to the casserole dish, cover with the mashed potatoes. Bake in preheated oven for 20 minutes, top with shredded cheese and bake for an additional 10 (or until cheese is melty).
Note: the filling will not really have much of a sauce, so best to not overcook the meat since it will keep cooking in the oven.
If you want to keep things traditional, try it with lamb! Unsure if you like lamb? Do half lamb and half ground beef and then make meatballs with the other 1/2! I think you'll find out you kinda like it. :)
