Fish Tacos

Ingredients
- (1 1/2 lbs) Alaskan Cod, 6 oz portions
- (1 (or 2 Tbsp)) Lime juice
- (2 Tbsp) Olive or avocado oil
- (2 tsp) Chili powder
- (1 tsp) Garlic powder
- (1/2 tsp) Cumin
- (1/2 tsp) Paprika
- (1/4 tsp) Sea salt
- (1/8 tsp) Black pepper, ground
- Tortillas, avocado, lime, cilantro, raw or pickled onions, pico de gallo, shredded cabbage, sour cream
Directions
- In a gallon bag add lime juice, oil, chili powder, garlic powder, cumin, paprika, salt, and pepper. Add cod, let marinate for 15 minutes. Meanwhile make slaw and/or sauce.
- Cilantro-lime Slaw (from Midwest Foodie):
- Ingredients: 14 oz thinly sliced cabbage, 1/2 small red onion, petite diced, 1/2 c freshly chopped cilantro, 1/3 c olive oil, 1/4 c lime juice, 2 tsp honey, 1/2 tsp ground cumin, 1/4 tsp garlic powder, Kosher salt, fresh cracked pepper
- Mix cabbage, onion and cilantro together. Mix together remaining ingredients, pour over slaw.
- Lime Crema Sauce: Mix together in a small bowl: 1/2 c sour cream, 1/2 tsp garlic powder, 1 Tbsp lime zest (1 lime), 1/4 tsp lime juice, and a pinch of salt (optional: 1/4 tsp cayenne pepper for spice).
- Cook the fish: Broil on High on greased pan for 5 minutes. OR Bake in 400°F oven for 8-12min on prepared baking sheet. OR Pan cook in a non-stick or cast iron skillet with some oil over medium-high heat for 3 minutes per side in a hot pan. Grill over medium-high heat.
- Assemble: Warm up tortillas in the microwave, skillet or grill. Fill with fish and top with your favorite toppings, hopefully you try the slaw and crema! Serve with chips, queso and a margarita! Enjoy!!
