Artichokes and Bacon

Ingredients
- (1/2 pound) Jowl Bacon
- (3 Tbsp) Rendered Lard, 8 oz
- (1 medium, sliced into thin wedges) Onion
- (5 cloves, minced) Garlic
- (13 3/4 oz brined, quartered) Artichoke hearts
Directions
- Heat the lard in a large pan. Add the onion, and sauté over medium-high heat.
- Add the garlic, and sauté for 1 minute; add the bacon and sauté for 2 minutes; add the quartered artichokes.
- Cover and simmer over medium-low heat for 25 minutes.
Serve over rice, pasta or collard greens.
