Artichokes and Bacon
Great for when you're in a hurry but want a savory dish!

  • (1/2 pound) Jowl Bacon
  • (3 Tbsp) Rendered Lard, 8 oz
  • (1 medium, sliced into thin wedges) Onion
  • (5 cloves, minced) Garlic
  • (13 3/4 oz brined, quartered) Artichoke hearts


  1. Heat the lard in a large pan. Add the onion, and sauté over medium-high heat.
  2. Add the garlic, and sauté for 1 minute; add the bacon and sauté for 2 minutes; add the quartered artichokes.
  3. Cover and simmer over medium-low heat for 25 minutes.

Serve over rice, pasta or collard greens.
