One-Pan Chops with Creamy Bacon Sauce

Ingredients
- (2 lbs) Boneless Pork Chops
- (1/2 lb) Bacon ENDS
- (3 cloves) garlic cloves, minced
- (1-1/2 cups) chicken broth
- (4 oz) cream cheese
- (to taste) sea salt & black pepper
Directions
- Season the chops on both sides with salt & pepper.
- Over medium heat, cook the bacon pieces until a little crispy, remove bacon.
- Increase to medium-high heat, cook the chops in the rendered bacon fat until the internal temp reaches 135°F, being careful to not overcook, remove chops from pan and cover to let rest and finish cooking*.
- Reduce heat to medium, add garlic. Cook for 1-2 minutes, stirring. Add chicken broth and scrape bottom of pan to deglzae. Bring to a simmer and then add cream cheese. Use a whisk to melt and mix until smooth and thickened to your liking. Season with salt & pepper to taste.
- Return chops to pan, coat in sauce (add more broth if gets too thick). Sprinkle with bacon. Serve!
Great with Brussel sprouts (they love bacon!), a Cesear salad and/or garlic mashed potatoes.
*cooking time will vary depending on thickness of chops, use a thermometer, remove at 135°F with a covered 10 min rest to reach 145°F.
