Pork Lettuce Wraps (or salad, wrap or sandwich!)

Ingredients

  • (1 lb, cut further into bite-sized pieces if necessary) Pork Stew Meat
  • (2 Tbsp) Rendered Lard, 8 oz
  • (diced) 1/2 onion (yellow or red)
  • (8 oz, diced) Mushrooms (cremini, bella, shitake, button...whatever you prefer!)
  • (1/4 cup, diced) Roasted red peppers
  • (1 Tbsp) Nothing Hidden Ranch Seasoning, 2.7oz glass jar
  • (1/4 cup) Water, chicken or pork stock
  • (large whole leaves for wrapping) Lettuce (romaine, butter or cabbage for lots of crunch!)
  • Optional Toppings: shredded carrots, sliced radishes, diced bell peppers, cilantro, parsley, lime juice, cheese, avocado

Directions

  1. Heat a pan over medium-high heat, add your preferred high heat oil and heat until shimmery hot. Add pork to pan and cook until nicely browned, being careful to not overcrowd the pan so each piece can sear nicely.
  2. Add onion, mushrooms and any other veggies you’d like to soften. Cook until pork and veggies are a nice golden brown.
  3. Add roasted red peppers, ranch seasoning and water, heat through for 1-2 minutes or until water is cooked off and seasonings absorbed, stirring frequently.
  4. Serve with all the suggested toppings you’d like!

Note: this is a very versatile recipe! Use whatever veggies you have on hand, can be served as a salad or in a tortilla wrap or sandwich too!
