Potato & apple hash with Canadian bacon

Ingredients
- (1 lb) Canadian Bacon
- (1 lb) Sweet potatoes, cubed, peeled if not organic
- (1/2 lb) Potatoes, cubed, peeled if not organic
- (3 Tbsp) Olive oil or favorite high-temp liquid oil
- (1, medium or your preference) Red onion, chopped
- (2) Apples, cored & cubed (peel if not organic; best apples are firm like Granny Smiths, Honeycrisp, Braeburn, Fuji)
- (1-2 Tbsp) Fresh thyme, minced or 1 tsp dried thyme
- (to taste) Sea salt
- (to taste) Black Pepper
- (Optional) Brown Eggs, 1 doz
Directions
- Preheat the oven to 400°F. Toss the cubed potatoes with ~2 Tbsp of oil and spread in a single layer on a baking sheet.
- Season the potatoes with salt and pepper, and then roast until just barely soft, about 10-15 minutes.
- Heat a large skillet over medium high heat and add the remaining oil, enough to coat the bottom of the pan.
- Sauté the onion for 1 minute, then add the bacon and cook until heated through, about 2 minutes more.
- Add the apples, thyme and cooked potatoes to the skillet and cook for another 5 minutes, stirring every few minutes.
- Remove from the heat, top with cooked eggs and garnish with extra thyme if desired. Serve with your favorite condiments, like hot sauce & sour cream! :)
Note: this is a versatile recipe! Use mushrooms or whatever other veggies you happen to have on hand. Use all regular potatoes (white, purple or yellow) or all sweet potatoes if you prefer.
