Potato & apple hash with Canadian bacon
Such a fast, easy and versatile recipe - here to help you any time. Canadian bacon gives you all the bacon flavor but with less of the fat. Love fat? Use any of the other bacons for this recipes!

Ingredients

  • (1 lb) Canadian Bacon
  • (1 lb) Sweet potatoes, cubed, peeled if not organic
  • (1/2 lb) Potatoes, cubed, peeled if not organic
  • (3 Tbsp) Olive oil or favorite high-temp liquid oil
  • (1, medium or your preference) Red onion, chopped
  • (2) Apples, cored & cubed (peel if not organic; best apples are firm like Granny Smiths, Honeycrisp, Braeburn, Fuji)
  • (1-2 Tbsp) Fresh thyme, minced or 1 tsp dried thyme
  • (to taste) Sea salt
  • (to taste) Black Pepper
  • (Optional) Brown Eggs, 1 doz

Directions

  1. Preheat the oven to 400°F. Toss the cubed potatoes with ~2 Tbsp of oil and spread in a single layer on a baking sheet.
  2. Season the potatoes with salt and pepper, and then roast until just barely soft, about 10-15 minutes.
  3. Heat a large skillet over medium high heat and add the remaining oil, enough to coat the bottom of the pan.
  4. Sauté the onion for 1 minute, then add the bacon and cook until heated through, about 2 minutes more.
  5. Add the apples, thyme and cooked potatoes to the skillet and cook for another 5 minutes, stirring every few minutes.
  6. Remove from the heat, top with cooked eggs and garnish with extra thyme if desired. Serve with your favorite condiments, like hot sauce & sour cream! :)

Note: this is a versatile recipe! Use mushrooms or whatever other veggies you happen to have on hand. Use all regular potatoes (white, purple or yellow) or all sweet potatoes if you prefer.
