Slow Cooker Beef Stroganoff

Ingredients
- (1 pound) Skirt Steak
- (8 oz.) fresh mushrooms, sliced
- (1 cup) onion, diced
- (1/2 cup) green onions, chopped
- (2 Tbsp) dried parsley
- (1 tsp) black pepper
- (2 Tbsp) dried mustard
- (2 tsp) honey
- (2 Tbsp) tamari or soy sauce
- (4 Tbsp) tomato paste
- (4 Tbsp) arrowroot powder or cornstarch
- (2 cups) Simple Beef Bone Broth, 32 oz (sugar-free, unsalted)
- (Optional 6 oz cream/yogurt, 4 oz cheese) sour cream or Greek yogurt, 4 oz. cream cheese
Directions
- Add all the ingredients to the slow cooker except the optional dairy products (if using flank or skirt steak, slice into thin strips against the grain).
- Cook on Low for 8-10 hours or High 4-5 hours.
- During the last half hour, add 4 oz softened cream cheese and 6 oz sour cream (or 1 cup Greek yogurt) and stir to combine. Cook through (about 15 minutes).
- Serve with egg noodles, riced cauliflower, or mashed potatoes.
Steph's Secret: All ingredients except the dairy can be frozen in a gallon Ziploc bag for a future meal so it would be wise to make one for now and one for later!
