Garlic & Herb Butter Baked Cod
Clean, not fishy-tasting fish, wild-caught in Alaska so you know it's good for you & everyone you're feeding, cooked with some simple butter and seasoning = what's not to love?!  Heck, I think a few picky eaters might even find this to be a new favorite!

Ingredients

  • (4) Alaskan Cod, 6 oz portions
  • (3 Tbsp) Butter
  • (1 Tbsp) Virgin Olive Oil
  • (4 (or 1 tsp garlic powder)) Garlic cloves, minced
  • (2 Tbsp finely chopped) Fresh herbs: parsley, chives, thyme, lemon thyme, tarragon, rosemary
  • (1/2 tsp) Smoked paprika
  • (1) Lemon or lime, thinly sliced
  • Salt & pepper, to taste

Directions

  1. Preheat your oven to 400°F, place the cod in a baking dish (note that glass retains heat better and helps food cook more evenly). In a small bowl, mix together the butter, olive oil, minced garlic, parsley, paprika, salt, and pepper.
  2. Spread the compound butter mixture on top of each filet. Lay the lemon slices both on top and under the cod filets.
  3. Bake in the oven for 13 to 15 minutes, or until the cod is opaque and flakes easily with a fork. The fish is perfectly cooked at an internal temp of 145°F. It should be plump and fleshy without any cracks on the surface. DO NOT overbake the fish or it will turn rubbery and dry. If it cracks apart while baking, it’s overcooked.
  4. Before serving, spoon the juices from the baking dish over the cod.
  5. Serve with bread or rolls for dipping into the melted butter sauce along with some risotto, asparagus or a salad.

If you have leftover butter, wrap in saran wrap and store in the freezer until needed.

Next time change up the seasonings! Try Cajun, Italian, French, Spanish or Mexican flavor blends.
