Quick Pork Lettuce Cups
Quick Recipe for a Hot Day!

Ingredients

  • (1 lb) Ground Pork
  • 1 Tbsp high-heat oil: tallow, lard, ghee, bacon fat, etc.
  • Veggies (use all, some or none): diced red onion, shredded carrots, diced mushrooms, diced zucchini, finely diced water chestnuts (highly recommend!)
  • 3 cloves garlic, minced
  • 2 tsp. toasted sesame oil
  • Sauce:
  • 1 tsp dried ginger (or 2 tsp ginger paste)
  • 2 Tbsp rice vinegar (or lime juice)
  • 1 Tbsp fish sauce (Red Boat)
  • 1 Tbsp soy sauce or tamari
  • 1 Tbsp packed light brown sugar
  • Optional: 1 Tbsp lemongrass paste
  • Optional heat: 1/4 tsp red pepper flakes or 1 tsp chili paste
  • For Serving:
  • 1 head butter or iceberg lettuce
  • Fresh cilantro
  • Chopped, roasted peanuts or cashews
  • Pickled onions

Directions

  1. Whisk together sauce ingredients: ginger, fish + soy sauces, vinegar, sugar, lemongrass and red pepper. Set aside.
  2. Heat a cast-iron skillet + high-temp oil over medium-high heat, cook the pork for about 4 minutes, breaking it apart as it cooks, add the garlic, cook for 1 minute or until pork is cooked through. If preferred, remove any excess fat and save for future frying or candle making.
  3. If using, add the veggies, stirring frequently until softened and heated through, 5-7 minutes.
  4. Add the sauce and cook for 1 1/2 minutes or until it thickens and coats the filling mixture.
  5. Remove from heat and stir in the sesame oil. Serve in lettuce cup topped with cilantro, peanuts, scallions, sesame seeds or whatever you prefer in your little bundle of joy!! Can also serve on a rice bowl.
