Enjoy this lesser know steak that is the second most tender cut on the whole animal, being surpassed only by the tenderloin; but, unlike the tenderloin it is full of beefy flavor. 

You'll love this steak for grilling & slicing! This specialty cut is gaining popularity for being a flavorful and easy steak. 

It cooks fast since it's cut thin and it's packed with beefy flavor which means it will taste great! 

We do recommend marinating and tenderizing to highlight the flavor and, as with hanger steaks or flank steak, be sure to cut against the muscle grain - which runs at a 45 degree angle, rather than the end-to-end like usual, so take care when slicing!
