Flat Iron Steak with Garlic Butter

Ingredients
- (1 lb) Flat Iron Steak
- (3 Tbsp) High-heat oil: tallow, lard, ghee, bacon fat, etc
- (2 Tbsp) Extra-virgin Olive Oil
- (1 Tbsp) Worcestershire Sauce
- (1 tsp) Paprika
- (1 tsp) Oregano
- (1/2 tsp) Good salt
- (1/2 tsp) Black pepper
- (More than you think is societally acceptable to use) Garlic Butter
Directions
If you have time and forethought: let steak sit on the counter for an hour before prepping, so it comes to room temp.
- In a small bowl whisk together the marinade ingredients (olive oil, Worcestershire, paprika, oregano, salt, pepper). Place the steaks on a rimmed baking sheet and rub the mixture onto all sides of the steak. Set aside at room temperature for up to an hour or refrigerate overnight.
- Cook steaks on the grill or using a cast iron skillet, note that this steak is best when cooked to rare or medium-rare:
- GRILL: Grill over hot coals 4 minutes per side.
- STOVE: Preheat a cast iron skillet over medium heat, and melt your preferred high-heat oil in the pan. Add the steaks to the hot pan. Cook for about 5 to 6 minutes on each side, or to your desired doneness.
- Transfer to a cutting board to rest for 5-10 minutes.
- White the steaks rest, make your favorite steak sides: a salad, potatoes, sautéed veggies or maybe just a drink.
- Top with as much garlic butter as you’d like - not what you think is acceptable to society - society isn’t even there! And then savor each bite & enjoy immensely.
