Classic Beef Stew
Beef stew is a classic because it warms you to the bone on those chilly winter days but it's also delicious and really quite easy to make - especially if you use the slow cooker! And this recipe pulls together all those classic ingredients and flavors but, as always, adjust to suit your personal tastes (or available ingredients)!

Ingredients

  • (1-2 lbs) Beef Stew Meat
  • (3) Carrots, chopped (peeled, if not organic)
  • (2) Potatoes, chopped (peeled, if not organic)
  • (2) Celery, chopped
  • (1) Onion, small
  • (2 tsp) Thyme, dry
  • (1 tsp) Rosemary, dry
  • (1) Bay leaf
  • (1 tsp) Sea salt
  • (1/4 tsp or to taste) Black pepper
  • (2 tsp) Worcestershire sauce
  • (7 cups (2 containers needed)) Simple Beef Bone Broth, 32 oz (sugar-free, unsalted)
  • (1/4 cup) Arrowroot or cornstarch
  • Optional: green beans, peas, corn

Directions

  1. Add all ingredients, except the optional veggies and arrowroot/cornstarch to a slow cooker.
  2. Cook on Low for 8-10 hours or High for 5-6 hours. 
  3. About 30 min before serving mix arrowroot or cornstarch with ¼ cup of broth from the slow cooker and stir back in. If adding any optional veggies those can be added now. Cook for last 30 min. 
  4. Serve hot, with well-buttered crusty bread and with a dry red wine or a dark beer. 
  5. Whoever gets the bay leaf doesn't have to do dishes! Enjoy!

Steph's Secret: Prep once, cook twice! All ingredients can be frozen in a gallon ziploc bag for a future meal so it would be wise to make one for now and one for later! Simply double the ingredients and add all the ingredients to the bag (frozen meat packages can be cut open and dropped in the bag frozen or make a note on the gallon bag that they are needed at cook time). I recommend double bagging the gallon meal bag and placing the arrowroot or cornstarch in a separate snack bag between the two gallon bags. Any optional veggies can go in a quart bag between the two gallon bags as well and the beef broth can be added to the gallon freezer bag or make a note to add at time of cooking if you're short on freezer space and have the broth in the pantry or plan on making it when you need it (DIY kit here).
